Spring cupcakes by Emma

Emma was tasked with making cupcakes to take to Easter dinner yesterday.  She just finished up a cake decorating class at co-op and was ready for the challenge. It was fun seeing her use what she's been learning.  At age eight, she is already a better homemaker than I was at 25! 

She chose a Neapolitan cupcake recipe from Allrecipes.com...oh my goodness is it a tasty one!  Double chocolate brownie on the bottom with a layer of strawberry cake topped with buttercream frosting.  


Next she cut mini marshmallows in half and rolled them in sprinkles.  The sprinkles stick to where the marshmallow was cut and adds some color to the petals.


 Green sprinkles for "grass" added extra color.





They were as pretty as they were delicious!  Unfortunately, there are still some downstairs...sitting directly in between me and the treadmill.  Not sure I have enough willpower to resist.  Now that I think about it, they would go nicely with a second cup of coffee...

    Those cupcakes look fabulous!!!
    And I've heard something about calories not counting if your daughter was the one baking. Er, something like that. I'm sure a few steps on the treadmill will take care of anything missed by that myth. *wink*
